Peel and slice the sweet potatoes into 1/4-inch thick rounds.

In a saucepan, melt the butter over medium heat. Add the brown sugar, cinnamon, nutmeg, vanilla extract, and salt. Stir until the sugar has dissolved.

Place the sweet potato slices in a baking dish and pour the butter mixture over them. Toss to coat evenly.
