In a bowl, cream together butter and powdered sugar until light and fluffy.

Add vanilla extract and egg yolk, mix well.

Gradually add all-purpose flour and mix until the dough comes together.

Divide the dough into two equal parts. Add cocoa powder to one part and mix well.

Roll out both doughs into rectangular shapes of equal size.

Place the cocoa dough on top of the plain dough and press lightly to stick them together.

Roll the dough tightly into a log shape and wrap it in plastic wrap. Refrigerate for 30 minutes.

Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.

Slice the chilled dough log into thin slices and place them on the prepared baking sheet.

Bake for 10-12 minutes or until lightly golden.

Let the cookies cool completely.

Spread jam on the bottom side of one cookie and sandwich it with another cookie.

Roll the edges of the sandwich cookies in sprinkles.
