  1. Preheat the oven to 180°C (350°F).
  2. Cut the rhubarb into 1-inch pieces.
  3. In a bowl, mix the rhubarb with 100 grams of sugar and let it sit for 15 minutes.
  4. In another bowl, whisk the eggs with the remaining sugar.
  5. Melt the butter and add it to the egg mixture.
  6. Gradually add the flour, salt, and vanilla extract to the egg mixture, stirring well after each addition.
  7. Grease a tart pan and pour the batter into it.
  8. Arrange the rhubarb pieces on top of the batter.
  9. Bake in the preheated oven for 40 minutes or until the tart is golden brown.
  10. Let the tart cool for 30 minutes before serving.
  11. Serve with whipped cream.
