  1. Preheat the oven to 350°F (175°C). Grease a 9-inch square baking dish.
  2. In a medium bowl, combine the all-purpose flour, granulated sugar, unsalted butter, and salt. Mix until crumbly.
  3. Press half of the mixture into the prepared baking dish to form the crust.
  4. In another bowl, beat the egg and vanilla extract together. Stir in the rhubarb and cornstarch until well combined.
  5. Pour the rhubarb mixture over the crust in the baking dish.
  6. Sprinkle the remaining crumb mixture over the top.
  7. Bake in the preheated oven for 40 minutes, or until the top is golden brown.
  8. Allow to cool in the baking dish for 30 minutes before cutting into squares.
  9. Dust with powdered sugar before serving.
