Rhubarb is technically a vegetable, but it is often used in sweet dishes like pies and breads.

Preheat the oven to 350°F (175°C). Grease a loaf pan.

In a medium bowl, combine the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

In a large bowl, beat the eggs. Add the sugar, oil, and vanilla extract. Mix well.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Fold in the rhubarb and chopped nuts.

Pour the batter into the prepared loaf pan.

Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let it cool in the pan for 10 minutes.

Transfer the bread to a wire rack to cool completely before slicing.
