Rhubarb is often referred to as the ‘pie plant’ due to its popular use in pies and other baked goods.

  1. Preheat the oven to 350°F (180°C). Grease a 9x9-inch baking dish.
  2. In a medium bowl, combine the flour and granulated sugar. Cut in the butter until the mixture resembles coarse crumbs.
  3. Press the mixture into the bottom of the prepared baking dish.
  4. In a separate bowl, beat the eggs, vanilla extract, and salt until well combined. Stir in the rhubarb.
  5. Pour the rhubarb mixture over the crust in the baking dish.
  6. Bake for 35-40 minutes, or until the filling is set and the crust is golden brown.
  7. Allow the bars to cool completely in the baking dish.
  8. Once cooled, dust with powdered sugar.
  9. Cut into squares and serve.
