Rhubarb Cheesecake Dream Bars
Rhubarb is technically a vegetable, but it is often used in sweet desserts like this cheesecake bar.

Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish.

In a medium bowl, combine graham cracker crumbs and melted butter. Press into the bottom of the prepared baking dish.

In a large mixing bowl, beat cream cheese and granulated sugar until smooth. Add eggs one at a time, beating well after each addition. Stir in vanilla extract and flour.

Fold in chopped rhubarb and sliced strawberries. Pour the mixture over the crust in the baking dish.

Bake for 35-40 minutes, or until the edges are set and the center is slightly jiggly. Remove from the oven and let cool completely.

Refrigerate for at least 2 hours, or overnight, until chilled.

Before serving, dust with powdered sugar.
