  1. Preheat the oven to 350°F (175°C).
  2. Cut the rhubarb into small pieces.
  3. In a saucepan, cook the rhubarb with 1/2 cup of sugar over medium heat until it becomes soft and releases its juices.
  4. Remove from heat and let it cool.
  5. In a separate bowl, whisk together the egg, milk, vanilla extract, and remaining sugar.
  6. Spread butter on one side of each bread slice.
  7. Cut the bread into triangles.
  8. In a baking dish, layer half of the bread slices, buttered side up.
  9. Pour half of the rhubarb mixture over the bread.
  10. Repeat the layers with the remaining bread and rhubarb mixture.
  11. Pour the egg mixture over the top.
  12. Sprinkle cinnamon on top.
  13. Let it rest for 10 minutes.
  14. Bake in the preheated oven for 35-40 minutes or until golden and set.
  15. Serve warm and enjoy!
