  1. Wash and chop the collard greens.
  2. Heat olive oil in a large pot over medium heat.
  3. Add onion and garlic to the pot and sauté until translucent.
  4. Add collard greens to the pot and cook for 5 minutes, stirring occasionally.
  5. Pour in vegetable broth, apple cider vinegar, smoked paprika, red pepper flakes, salt, and black pepper.
  6. Bring to a boil, then reduce heat and simmer for 45 minutes.
  7. Remove from heat and let rest for 10 minutes before serving.
