In a mixing bowl, combine the pie crust and lemon zest until well mixed. Press the mixture into a tart pan.

In another bowl, whisk together the condensed milk, lemon juice, and egg yolks until smooth. Pour the mixture into the tart pan.

Bake for 25-30 minutes or until the filling is set.

Remove from the oven and let it cool for 10 minutes. Then, refrigerate for at least 1 hour.

Serve chilled with a dollop of whipped cream and garnish with fresh mint leaves.
