Red Velvet cake, from which these cookies are inspired, is said to have originated in the 1800s. The vibrant red color is traditionally achieved through a reaction between cocoa powder and acidic ingredients like buttermilk and vinegar.

In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.

Beat in the egg, red food coloring, and vanilla extract until well combined.

Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk, beginning and ending with the dry ingredients.

Drop spoonfuls of dough onto the prepared baking sheets and flatten slightly with the back of a spoon.

Allow the cookies to cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.

In a medium bowl, beat together cream cheese, powdered sugar, and vanilla extract until smooth.

Spread the cream cheese frosting onto the bottom of one cookie, then sandwich with another cookie.

Repeat with the remaining cookies.
