  2. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the cocoa powder, red food coloring, and vanilla extract.
  3. In a separate bowl, combine the buttermilk, flour, baking soda, vinegar, and salt. Add the dry ingredients to the wet ingredients and mix until just blended.
  4. Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  5. Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then transfer them to a wire rack to cool completely.

  7. Place one cake layer on a serving plate and spread a layer of cream cheese frosting on top. Place the second cake layer on top and frost the top and sides with the remaining cream cheese frosting.
  8. Refrigerate the cake for at least 1 hour before serving. Serve with a dollop of whipped cream on top, if desired.
