  1. Preheat oven to 450°F. Place 1 pie crust in ungreased 9-inch glass pie plate. Press firmly against side and bottom.
  2. In medium bowl, mix raspberries, sugar, cornstarch and lemon juice. Spoon into crust-lined pie plate. Top with second crust; seal edges and flute. Cut slits in several places in top crust.
  3. Bake 8 to 12 minutes or until crust is golden brown. Cool completely, about 1 hour.
  4. In chilled medium bowl, beat whipping cream, powdered sugar and vanilla with electric mixer on high speed until soft peaks form. Spread or pipe whipped cream over cooled pie. Garnish with mint leaves.
  5. Refrigerate at least 2 hours before serving. Store covered in refrigerator.
