In a bowl, cream together butter and sugar until light and fluffy.

Beat in the egg and vanilla extract.

Divide the dough into 6 equal portions.

Add food coloring to each portion and mix well.

Roll each colored dough into a log shape.

Place the logs next to each other and gently press them together.

Wrap the dough in plastic wrap and refrigerate for 30 minutes.

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

Slice the dough into cookies and place them on the prepared baking sheet.

Bake for 10-12 minutes or until the edges are lightly golden.
