Quinoa with Mushrooms
Quinoa is not a grain, but a seed. It is often referred to as a pseudo-cereal.
This is vegetarian and gluten free recipe. Dish can be prepared in 45 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

Rinse the quinoa under cold water.

In a medium-sized saucepan, bring the vegetable broth to a boil and add the quinoa. Reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is tender and the liquid is absorbed.

Meanwhile, heat olive oil in a large skillet over medium heat. Add garlic and onion, and sauté until softened.

Add mushrooms and cook until they release their moisture and start to brown.

Stir in spinach and cook until wilted.

Once the quinoa is cooked, fluff it with a fork and transfer it to the skillet with the mushrooms and spinach. Mix well.

Add lemon juice, salt, and black pepper. Stir to combine.

Remove from heat and let it rest for 5 minutes.
