  4. Meanwhile, chop the dried apricots, dried cranberries, and green onions.
  5. In a large bowl, combine the cooked quinoa, dried fruit, pistachios, green onions, lemon juice, olive oil, salt, and black pepper.
  6. Mix well until all ingredients are evenly distributed.
