Rinse the quinoa thoroughly.

In a medium saucepan, bring 2 cups of water to a boil.

Add the rinsed quinoa to the boiling water, reduce heat to low, cover, and simmer for 15-20 minutes or until the water is absorbed.

Meanwhile, chop the dried apricots, dried cranberries, and green onions.

In a large bowl, combine the cooked quinoa, dried fruit, pistachios, green onions, lemon juice, olive oil, salt, and black pepper.

Mix well until all ingredients are evenly distributed.

Let the quinoa salad rest for 5 minutes to allow the flavors to meld.

Serve warm or chilled.
