  1. Rinse the quinoa under cold water.
  2. In a medium saucepan, bring the vegetable broth to a boil and add the quinoa. Reduce heat, cover, and simmer for 15 minutes or until the quinoa is cooked.
  3. In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until softened.
  4. Add the bell pepper and zucchini and cook for another 5 minutes.
  5. Stir in the diced tomatoes, kidney beans, black beans, chili powder, cumin, paprika, salt, and black pepper.
  6. Simmer for 15 minutes, stirring occasionally.
  7. Serve the quinoa vegetarian chili hot, garnished with fresh cilantro and a squeeze of lime juice.
