  1. Cook quinoa according to package instructions.
  2. Heat vegetable oil in a large skillet or wok over medium heat.
  3. Add minced garlic and cook for 1 minute.
  4. Add sliced carrots, broccoli florets, and diced red bell pepper. Stir-fry for 5-7 minutes until vegetables are tender-crisp.
  5. In a small bowl, whisk together soy sauce, sesame oil, salt, and black pepper.
  6. Push the vegetables to one side of the skillet and add cooked quinoa to the other side.
  7. Pour the sauce over the quinoa and vegetables. Stir to combine everything.
  8. Cook for an additional 2-3 minutes until heated through.
  9. Garnish with chopped green onions.
  10. Serve hot and enjoy!
