  1. Cook the quinoa according to package instructions and set aside.
  2. In a large skillet, heat the sesame oil over medium heat.
  3. Add the garlic and ginger and cook until fragrant, about 1 minute.
  4. Add the carrots and cook for 2 minutes.
  5. Add the corn and peas and cook for another 2 minutes.
  6. Push the vegetables to one side of the skillet and crack the eggs into the empty space.
  7. Scramble the eggs and then mix them with the vegetables.
  8. Add the cooked quinoa to the skillet and stir to combine.
  9. Season with soy sauce, salt, and pepper.
  10. Cook for an additional 2 minutes, stirring occasionally.
  11. Remove from heat and garnish with chopped scallions.
  12. Let the dish rest for 5 minutes before serving.
