  1. Preheat the oven to 180°C (350°F).
  2. Peel and dice the pumpkin into small cubes.
  3. Finely chop the onion and garlic.
  4. In a pan, heat some oil and sauté the onion and garlic until golden.
  5. Add the diced pumpkin, ground cumin, ground coriander, salt, and black pepper to the pan. Cook until the pumpkin is soft.
  6. Remove from heat and let the mixture cool.
  7. Melt the butter in a small saucepan.
  8. Lay out one phyllo pastry sheet and brush it with melted butter.
  9. Place a spoonful of the pumpkin mixture at the bottom corner of the sheet.
  10. Fold the sheet diagonally to form a triangle, enclosing the filling.
  11. Repeat with the remaining sheets and filling.
  12. Place the samsas on a baking sheet and brush with beaten egg mixed with water.
  13. Bake in the preheated oven for 20-25 minutes, or until golden brown.
  14. Remove from the oven and let them rest for 10 minutes before serving.
