  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan to form the crust.
  3. In a large bowl, beat the cream cheese until smooth. Add the pumpkin puree, eggs, vanilla extract, cinnamon, nutmeg, ginger, and salt. Mix until well combined.
  4. Pour the pumpkin mixture over the crust in the springform pan.
  5. Bake for 60 minutes or until the center is set.
  6. Remove the cheesecake from the oven and let it cool in the pan for 10 minutes.
  7. Run a knife around the edge of the pan to loosen the cheesecake.
  8. Remove the sides of the springform pan and let the cheesecake cool completely.
  9. Once cooled, refrigerate for at least 2 hours or overnight.
  10. Before serving, top the cheesecake with praline topping and whipped cream.
