  • 1 cup Pumpkin puree
  • 1/2 cup Butter, softened
  • 1/2 cup Granulated sugar
  • 1/2 cup Brown sugar
  • 1 Egg
  • 1 teaspoon Vanilla extract
  • 2 cup All-purpose flour
  • 1/2 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1/4 teaspoon Salt
  • 1/2 teaspoon Cinnamon
  • 1/4 teaspoon Nutmeg
  • 1/4 teaspoon Cloves
  • 1 1/2 cup Rolled oats
  • 1/2 cup Raisins
  • 1/2 cup Chopped walnuts
Instructions
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  2. Add the egg, vanilla extract, and pumpkin puree. Mix well.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Stir in the rolled oats, raisins, and chopped walnuts.
  6. Drop rounded spoonfuls of dough onto a greased or lined baking sheet.
  7. Bake for 10-12 minutes, or until the edges are golden brown.
  8. Allow the cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
