Pumpkin Bars

Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish.

In a large mixing bowl, combine the pumpkin puree, vegetable oil, granulated sugar, eggs, and vanilla extract. Mix well.

In a separate bowl, whisk together the all-purpose flour, baking powder, cinnamon, and salt. Gradually add the dry ingredients to the pumpkin mixture, stirring until well combined.

Pour the batter into the prepared baking dish and spread it evenly.

Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

While the bars are baking, prepare the cream cheese frosting. In a mixing bowl, beat the cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.

Remove the bars from the oven and let them cool completely in the baking dish.

Once cooled, spread the cream cheese frosting evenly over the bars.

Refrigerate for at least 1 hour before serving.
