Grate the potatoes and onion using a box grater.

Squeeze out the excess liquid from the grated potatoes and onion.

In a large bowl, mix together the grated potatoes, onion, egg, flour, and salt.

Heat vegetable oil in a large frying pan over medium heat.

Drop spoonfuls of the potato mixture into the hot oil and flatten them with a spatula.

Fry until golden brown on both sides, about 3-4 minutes per side.

Remove the latkes from the pan and drain on paper towels.

Serve hot with sour cream or applesauce.
