Preheat the oven to 220°C (425°F).

Roll out the puff pastry sheets and cut them into circles to fit the tart molds.

Place the pastry circles into the molds and press them gently.

In a saucepan, heat the milk, sugar, and vanilla extract over medium heat until it starts to simmer.

In a separate bowl, whisk together the cornstarch and egg yolks until well combined.

Slowly pour the hot milk mixture into the egg yolk mixture, whisking continuously.

Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens.

Remove the custard from the heat and let it cool for about 10 minutes.

Pour the custard into the prepared pastry shells.

Sprinkle cinnamon powder on top.

Bake in the preheated oven for about 15-20 minutes, or until the pastry is golden and the custard is set.

Remove from the oven and let the tarts cool in the molds for a few minutes.

Transfer the tarts to a wire rack and let them cool completely before serving.
