Paczki are traditionally eaten on Fat Thursday, the last Thursday before Lent, in Poland.

  1. In a small bowl, combine the yeast with warm milk and a pinch of sugar. Let it sit for 5 minutes until it becomes foamy.
  2. In a large mixing bowl, whisk together the flour, sugar, and salt.
  3. In a separate bowl, whisk together the egg yolks, melted butter, and vanilla extract.
  4. Pour the yeast mixture and the egg yolk mixture into the dry ingredients. Stir until a sticky dough forms.
  5. Turn the dough onto a floured surface and knead for about 5 minutes until it becomes smooth and elastic.
  6. Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour until it doubles in size.
  7. Punch down the dough and roll it out to a 1/2-inch thickness on a floured surface.
  8. Use a round cookie cutter or a glass to cut out circles from the dough. Place them on a baking sheet lined with parchment paper.
  9. Cover the doughnuts with a clean kitchen towel and let them rise for another 30 minutes.
  10. Heat vegetable oil in a deep fryer or a large pot to 350°F (175°C).
  11. Carefully drop the doughnuts into the hot oil and fry for about 2-3 minutes on each side until golden brown.
  12. Remove the doughnuts from the oil and place them on a paper towel-lined plate to drain excess oil.
  13. Dust the doughnuts with powdered sugar while they are still warm.
  14. Serve and enjoy!
