Trim the woody ends of the asparagus and blanch them in boiling water for 2 minutes.

Remove the asparagus from the boiling water and immediately transfer to an ice bath to stop the cooking process.

Heat olive oil in a skillet over medium heat. Add the hash browns and cook until golden brown and crispy.

In another pot, bring water to a gentle simmer. Crack the eggs into individual ramekins or small bowls.

Carefully slide the eggs into the simmering water and poach for about 3-4 minutes until the whites are set but the yolks are still runny.

Remove the poached eggs with a slotted spoon and drain excess water on a paper towel.

Place the hash browns on a plate, top with blanched asparagus, and then place the poached eggs on top.
