  1. Preheat the oven to 350°F (175°C). Grease a 9x9-inch baking dish.
  2. In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the cold unsalted butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  3. Press half of the crumb mixture into the bottom of the prepared baking dish to form the crust.
  4. In a separate bowl, mix together the crushed pineapple, lemon juice, cornstarch, and vanilla extract. Spread this pineapple mixture evenly over the crust.
  5. In the same mixing bowl used for the crust, add the shredded coconut, rolled oats, chopped walnuts, and remaining crumb mixture. Mix until well combined.
  6. Sprinkle the crumble topping evenly over the pineapple layer.
  7. Bake in the preheated oven for 30 minutes, or until the top is golden brown and the pineapple filling is bubbly.
  8. Remove from the oven and let cool in the baking dish for at least 1 hour.
  9. Once cooled, cut into bars and serve.
