  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a greased 9-inch springform pan to form the crust.
  3. In a separate bowl, beat cream cheese, sugar, and vanilla extract until smooth. Add eggs one at a time, beating well after each addition. Stir in crushed pineapple.
  4. Pour the cream cheese mixture over the crust in the springform pan. Smooth the top with a spatula.
  5. Bake in the preheated oven for 55-60 minutes or until the center is set. Remove from the oven and let it cool in the pan for 10 minutes.
  6. Run a knife around the edge of the pan to loosen the cheesecake. Remove the sides of the springform pan and allow the cheesecake to cool completely.
  7. Refrigerate for at least 2 hours or overnight.
  8. Serve chilled, topped with whipped cream and maraschino cherries if desired.
