Ingredients
  • 1.5 cup Graham cracker crumbs
  • 0.5 cup Unsalted butter, melted
  • 2 package Cream cheese, softened
  • 0.75 cup Granulated sugar
  • 0.5 cup Coconut milk
  • 0.5 cup Pineapple juice
  • 1 teaspoon Vanilla extract
  • 0.25 cup All-purpose flour
  • 1 cup Crushed pineapple, drained
  • 0.5 cup Shredded coconut
  • 1 cup Whipped cream
  • optional for garnish Maraschino cherries
Instructions
  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan to form the crust.
  3. In a large mixing bowl, beat the cream cheese and sugar until smooth. Add the coconut milk, pineapple juice, vanilla extract, and flour. Mix until well combined.
  4. Fold in the crushed pineapple and shredded coconut. Pour the mixture over the crust in the springform pan.
  5. Bake for 60 minutes, or until the center is set and the top is lightly golden.
  6. Remove from the oven and let cool in the pan for 10 minutes. Then, carefully remove the sides of the springform pan and let the cheesecake cool completely.
  7. Once cooled, refrigerate for at least 2 hours, or overnight, to allow the cheesecake to set.
  8. Before serving, garnish with whipped cream and maraschino cherries, if desired. Enjoy!
