Boil the potatoes until tender. Drain and mash them.

In a large bowl, combine the mashed potatoes, flour, salt, and pepper. Knead until the dough is smooth.

Roll out the dough on a floured surface and cut out circles.

Place a spoonful of the potato filling onto each circle and fold in half. Press the edges together to seal.

Boil the pierogies in salted water for a few minutes until they float to the surface.

Heat butter in a skillet and fry the pierogies until golden brown.

Serve hot with sautéed onions and sour cream.
