  1. Preheat the oven to 375°F (190°C).
  2. Peel and boil the potatoes until tender. Drain and mash them.
  3. In a skillet, melt 2 tablespoons of butter and sauté the onion and garlic until softened.
  4. In a large bowl, combine the mashed potatoes, sautéed onion and garlic, sour cream, salt, and black pepper. Mix well.
  5. Grease a casserole dish with butter.
  6. Layer half of the pierogi in the bottom of the dish.
  7. Spread half of the potato mixture over the pierogi.
  8. Sprinkle half of the cheddar cheese over the potato mixture.
  9. Repeat the layers with the remaining pierogi, potato mixture, and cheddar cheese.
  10. Top with bacon slices.
  11. Bake in the preheated oven for 45-50 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
  12. Let it rest for 10 minutes before serving.
  13. Garnish with fresh parsley.
