Preheat the oven to 325°F (160°C).

In a bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan.

In a large mixing bowl, beat the cream cheese, granulated sugar, lemon zest, lemon juice, and vanilla extract until smooth. Add the eggs one at a time, beating well after each addition.

In a separate bowl, toss the mixed berries with cornstarch until coated.

Pour half of the cream cheese mixture over the crust. Spoon the berry mixture over the cream cheese layer. Top with the remaining cream cheese mixture.

Bake for 55-60 minutes, or until the center is set and the top is lightly browned.

Remove from the oven and let cool in the pan for 10 minutes. Then, run a knife around the edge of the pan to loosen the cheesecake.

Refrigerate for at least 3 hours, or overnight, until chilled and set.

Before serving, remove the sides of the springform pan and dust the top of the cheesecake with powdered sugar.
