  1. Preheat the oven to 325°F (163°C).
  2. Mix the graham cracker crumbs and melted butter in a bowl until well combined. Press the mixture into the bottom of a 9-inch (23 cm) springform pan to form the crust.
  3. In a large mixing bowl, beat the cream cheese, sugar, and peppermint extract until smooth. Add the eggs one at a time, beating well after each addition. Stir in the sour cream.
  4. Pour the cream cheese mixture over the crust in the springform pan. Smooth the top with a spatula.
  5. Bake for 40 minutes or until the center is set.
  6. Remove the cheesecake from the oven and let it cool in the pan for 10 minutes.
  7. Run a knife around the edge of the pan to loosen the cheesecake. Remove the sides of the springform pan.
  8. Refrigerate the cheesecake for at least 2 hours or until chilled.
  9. Before serving, sprinkle the crushed peppermint candies over the top of the cheesecake. Serve with whipped cream if desired.
