  1. Preheat the oven to 180°C (350°F).
  2. Slice the eggplant into 1/4-inch thick rounds.
  3. Sprinkle salt over the eggplant slices and let them sit for 15 minutes to remove excess moisture.
  4. Rinse the eggplant slices and pat them dry with a paper towel.
  5. In a baking dish, arrange a layer of eggplant slices.
  6. Drizzle olive oil over the eggplant slices and season with salt and pepper.
  7. Bake in the preheated oven for 20 minutes, or until the eggplant is tender.
  8. In a separate pan, heat olive oil over medium heat.
  9. Add chopped onion and minced garlic. Sauté until the onion is translucent.
  10. Add diced tomatoes and cook for another 5 minutes.
  11. Remove the eggplant from the oven and pour the tomato mixture over it.
  12. Crumble feta cheese over the top.
  13. Sprinkle fresh herbs over the dish.
