Preheat the oven to 375°F (190°C). Grease a muffin tin or line with paper liners.

In a large bowl, combine the leftover oatmeal, all-purpose flour, baking powder, baking soda, cinnamon, and salt.

In a separate bowl, whisk together the egg, milk, vegetable oil, brown sugar, and vanilla extract.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.

Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
