In a medium bowl, whisk together the flour, cocoa powder, instant coffee, baking powder, and salt.

In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the egg, vanilla extract, and peppermint extract, and mix until well combined.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the chocolate chips and crushed candy canes.

Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each cookie slightly with the back of a spoon.
