  2. In a bowl, mix graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan.
  3. In a separate bowl, beat cream cheese, sugar, and vanilla extract until smooth. Add eggs, one at a time, beating well after each addition. Stir in flour.
  4. Pour the cream cheese mixture over the crust in the springform pan. Smooth the top with a spatula.
  5. Bake for 55-60 minutes or until the center is set. Remove from the oven and let it cool in the pan for 10 minutes.
  6. Spread pepper jelly evenly over the top of the cheesecake. Refrigerate for at least 2 hours or until chilled.
