Preheat the oven to 350°F (175°C). Grease and flour a round cake pan.

In a large bowl, combine the flour, sugar, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs.

In a separate bowl, whisk together the eggs, milk, and vanilla extract. Add the wet ingredients to the dry ingredients and mix until just combined.

Pour the batter into the prepared cake pan. Sprinkle the pepitas evenly over the top.

Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
