In a bowl, mix peanut butter, powdered sugar, vanilla extract, and salt until well combined.

Shape the mixture into small balls and place them on a baking sheet lined with parchment paper.

Place the baking sheet in the refrigerator and let the truffles chill for about 1 hour.

In a microwave-safe bowl, melt the dark chocolate in 30-second intervals, stirring in between, until smooth.

Dip each chilled truffle into the melted chocolate, coating it completely, and place it back on the baking sheet.

Sprinkle chopped peanuts on top of each truffle.

Return the truffles to the refrigerator and let them set for another 30 minutes.
