In a medium bowl, whisk together the flour, baking soda, and salt.

In a separate large bowl, cream together the softened butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.

Beat in the egg and vanilla extract.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Roll the dough into 1-inch balls and place them on a baking sheet.

Press each ball with a fork to create a crisscross pattern.

Bake for 10-12 minutes, or until lightly golden.

Allow the cookies to cool completely.

Spread strawberry jelly on the bottom side of one cookie and sandwich it with another cookie.

Repeat with the remaining cookies and jelly.
