  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, combine graham cracker crumbs and melted butter. Press onto the bottom of a 9-inch springform pan.
  3. In a separate bowl, beat cream cheese, granulated sugar, and vanilla extract until smooth. Add eggs, one at a time, beating well after each addition.
  4. Pour the cream cheese mixture over the crust. Arrange peach slices on top.
  5. Bake for 55-60 minutes or until the center is set. Remove from the oven and let it cool in the pan for 10 minutes.
  6. Remove the sides of the springform pan and let the cheesecake cool completely.
  7. In a chilled bowl, beat heavy cream and powdered sugar until stiff peaks form. Spread over the cooled cheesecake.
  8. Refrigerate for at least 2 hours before serving.
  9. Serve chilled and enjoy!
