Peach Shortcakes
Peach Shortcakes originated in the southern United States and are a popular dessert during the summer when peaches are in season.

Preheat the oven to 425°F (220°C).

In a mixing bowl, combine the flour, sugar, baking powder, and salt. Cut in the butter with a pastry blender until the mixture resembles coarse crumbs.

Stir in the milk and mix until the dough forms. Turn the dough onto a floured surface and knead gently.

Roll out the dough to 1/2-inch thickness and cut into rounds using a biscuit cutter. Place the rounds on a baking sheet lined with parchment paper.

Bake for 12-15 minutes or until golden brown. Allow the shortcakes to cool.

In the meantime, peel and slice the peaches. Set aside.

To assemble the shortcakes, slice each biscuit in half horizontally. Place a spoonful of whipped cream on the bottom half, followed by a few peach slices. Top with the other half of the biscuit.

Repeat with the remaining biscuits and peaches. Garnish with mint leaves.
