  1. Preheat the oven to 350°F (175°C). Grease a muffin tin.
  2. In a large bowl, combine the flour, granulated sugar, baking powder, and salt.
  3. In a separate bowl, whisk together the milk, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Gently fold in the diced peaches.
  6. In a small bowl, mix together the brown sugar and ground cinnamon.
  7. Spoon the batter into the prepared muffin tin, filling each cup about halfway.
  8. Sprinkle the cinnamon sugar mixture over the top of each patty cake.
  9. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  10. Remove from the oven and let cool in the tin for 10 minutes.
  11. Transfer the pattycakes to a wire rack to cool completely.
