  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  2. In a separate bowl, whisk together the milk, egg, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Heat a non-stick skillet or griddle over medium heat and melt a tablespoon of butter.
  5. Pour 1/4 cup of batter onto the skillet for each pancake.
  6. Slice the peaches and place a few slices on top of each pancake.
  7. Cook until bubbles form on the surface of the pancake, then flip and cook for another 1-2 minutes.
  8. Repeat with the remaining batter and peaches.
  9. Serve the pancakes with maple syrup.
