Roll out the puff pastry sheet and cut it into 12 equal squares.

Transfer the pastry squares to a baking sheet lined with parchment paper.

Brush each square with beaten egg and sprinkle with salt and black pepper.

Slice the peaches into thin wedges and arrange them on top of each pastry square.

Divide the brie cheese into 12 equal portions and place on top of the peaches.

Sprinkle fresh rosemary and drizzle honey over the tartlets.

Bake in the preheated oven for 15 minutes, or until the pastry is golden brown and the cheese has melted.
