  1. Preheat the oven to 120°C (250°F). Beat the egg whites until stiff peaks form. Gradually add the caster sugar and continue beating until the mixture is glossy. Sift in the cornstarch and add the vinegar. Gently fold until combined. Line a baking tray with parchment paper and shape the meringue mixture into a round disc. Bake for 90 minutes, then turn off the oven and let the pavlova cool inside for 1 hour. Top with whipped cream and fresh fruit. Garnish with mint leaves. Serve and enjoy!
