In a bowl, mix together flour, sugar, and salt. Cut in butter until the mixture resembles crumbs.

In a separate bowl, whisk together egg yolks and vanilla extract. Add the egg mixture to the flour mixture and mix until a dough forms.

Divide the dough into two equal portions and flatten into discs. Wrap in plastic wrap and refrigerate for at least 1 hour.

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

On a floured surface, roll out one disc of dough to 1/4 inch thickness. Cut out circles using a round cookie cutter.

Spoon a teaspoon of dulce de leche onto each circle of dough. Fold the dough over to form a crescent shape and seal the edges using a fork.

Place the crescents onto the prepared baking sheet and bake for 12-15 minutes or until golden brown.

Allow the crescents to cool on a wire rack before serving.
