Ingredients
  • 1.5 cup Chocolate cookie crumbs
  • 0.5 cup Butter, melted
  • 2 package Cream cheese, softened
  • 0.75 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Peppermint extract
  • 3 large Eggs
  • 1 cup Semi-sweet chocolate chips, melted
  • 0.5 cup Heavy cream
  • 3 drop Green food coloring
  • 1 cup Whipped cream
  • 2 tablespoon Chocolate shavings
  • 8 leaves Fresh mint leaves
Instructions
  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine the chocolate cookie crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan.
  3. In a large bowl, beat the cream cheese, sugar, vanilla extract, and peppermint extract until smooth.
  4. Add the eggs, one at a time, beating well after each addition.
  5. Stir in the melted chocolate chips.
  6. Pour the mixture over the crust in the springform pan.
  7. Bake for 55-60 minutes, or until the center is set.
  8. Remove from the oven and let cool in the pan for 10 minutes.
  9. Run a knife around the edges of the pan to loosen the cheesecake, then remove the sides of the pan.
  10. Let the cheesecake cool completely, then refrigerate for at least 4 hours or overnight.
  11. In a small bowl, whip the heavy cream until stiff peaks form.
  12. Add the green food coloring and mix until evenly colored.
  13. Pipe or spread the whipped cream onto the chilled cheesecake.
  14. Garnish with chocolate shavings and fresh mint leaves.
  15. Serve chilled and enjoy!
