Preheat the oven to 350°F (175°C).

In a large skillet, melt the butter over medium heat. Add the mushrooms, onion, and celery. Cook until the vegetables are tender.

In a large bowl, combine the bread cubes, cooked vegetables, vegetable broth, parsley, thyme, salt, and black pepper. Mix well.

Transfer the mixture to a greased baking dish. Cover with foil.

Bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the top is golden brown.

Let the stuffing rest for 10 minutes before serving.
